Dairy free, gluten free!
A great recipe when apples are in season. This recipe is super simple and kid approved. My daughter likes to make them as a little treat.
Ingredients
- 40g brown rice
- 10g tapioca
- 10g almond flour
- 3 eggs
- 3 tbs Almond milk
- 1 tsp vanilla flavor
- ¼ tsp baking powder
- 2 medium sized apples
- pinch of sea salt
- avocado oil
- cane sugar, coconut sugar, cinnamon, and/or honey for a topping
Directions
- Weigh the flours and mix very well.
- Add the baking powder and mix again.
- Add eggs, almond milk, vanilla, and salt. Mix batter really well.
- The batter should be somewhat thick, let is sit, it will thicken up while you are getting your apples ready.
- Wash and peel the apples and remove the core.
- Slice apples roughly ¼ of an inch thick, just enough to hold extra dough in the center.
- Heat up your frying pan with avocado oil.
- Soak the apple rings in the batter and place them in the pan.
- Wait till the top bubbles then turn them over and finish frying the other side.
- Once done, place on a plate and sprinkle your topping(s) of choice over it.
